NECTARINE PANCAKES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Delaney Estate in Waco, Texas in 1994.

Ingredients
  • 1/2 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons unsalted butter melted
  • 3 tablespoons brown sugar
  • 1-1 /2 cups milk
  • 2 fresh nectarines

Directions
  1. In mixing bowl sift dry ingredients.
  2. In separate bowl combine all other ingredients except nectarines using a whisk.
  3. Combine dry and wet ingredients then allow to rest 2 hours then heat griddle.
  4. In the meantime slice nectarines thinly then spoon pancake mixture onto griddle.
  5. Add sliced nectarines then flip once.
