Tomato Zucchini Scallop

- 2 small zucchini sliced shopping list
- 1 medium white onion sliced shopping list
- 2 small tomatoes peeled and sliced shopping list
- 1 cup plain croutons shopping list
- 1 tomato cut in wedges shopping list
- 1 cup sharp cheddar cheese shredded shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- In casserole layer half of the zucchini, onion, tomatoes and croutons.
- Season with half of the salt and pepper then repeat layers and top with tomato wedges.
- Cover and bake at 350 for 1 hour then uncover and sprinkle with cheese.
- Return to oven until cheese melts.
