Banoffee Pie

- 1 packet (225g) digestive biscuits shopping list
- 110g butter - melted shopping list
- 1 can condensed milk shopping list
- 4 tbsp brown sugar shopping list
- 1 tbsp butter shopping list
- 5 ripe bananas shopping list
- 500ml double (whipping) cream shopping list
- 1 Cadbury's flake for decoration shopping list
How to make it
- For the base
- Put biscuits in food processor and pulse until you have fine crumbs
- Combine melted butter
- Place the mixture into your chosen pan and press firmly - chill for at least 30 minutes
- For Toffee Layer
- Empty can of condensed milk into saucepan and heat over a low heat - stirring constantly
- When milk starts to bubble, add sugar and butter and keep stirring until the mixture thickens and comes away from the sides of the pan
- Pour mixture (as evenly as you can) onto the biscuit base and chill for a further 30 minutes
- For topping
- Slice the bananas and arrange them on top of the (now cool and solid) toffee layer
- Whip cream until it holds firm peaks and spread over bananas
- Crumble Flake (or similar) over top of pie
- Chill until ready to serve - make sure you get the first piece, or you might miss out!
