Summer Herb Pasta

- 1 lb campanella or corkscrew pasta shopping list
- 1c part-skim ricotta cheese shopping list
- 1/4c crumbled feta cheese shopping list
- 1/2tsp fresh grated lemon peel shopping list
- 1/2c looselt packed fresh parsley leaves,chopped shopping list
- 1/2c loosely packed fresh mint leaves,chopped shopping list
- 1/2c loosely packed fresh basil leaves,chopped shopping list
- 4 plum tomatoes,chopped. shopping list
How to make it
- Heat large,covered saucepot of salted water to boiling on high. Cook pasta as label directs.
- Meanwhile in bowl,combine ricotta,feta,lemon peel,and 1/4tsp each salt and fresh ground pepper.
- Reserve 1/3c pasta cooking water. Drain pasta and return to saucepot. Stir reserved cooking water into ricota mixture;toss with pasta to coat. Stir in herbs and chopped tomatoes.
