My mom makes this every year for Thanksgiving and Christmas, but I think it would be an excellent summertime dessert.

Ingredients
  • 1 box white cake mix
  • 1/2 cup crushed, frozen strawberries
  • 1 (3oz.) box Strawberry Jell-O
  • 4 eggs
  • 1/2 cup milk
  • 1 stick margarine
  • Frosting:
  • 1 box ( 1 lb.) confectioner's sugar
  • 1/2 stick margarine
  • 1/2 cup crushed strawberries: if frozen, drain( save juice in case it's needed in icing)

Directions
  1. Cream margarine
  2. Add eggs, one at a time, beating after each addition.
  3. Add cake mix, Jell-O, strawberries, and milk.
  4. Mix well.
  5. Bake in 3- 8 or 9 inch pans at 350* for 30-35 minutes. Remove from oven and let cool for 10 minutes then remove from pans.
  6. FROSTING:
  7. Melt margarine.
  8. Add sugar and mix well.
  9. Add strawberries and mix to spreading consistency using uice if needed.
  10. Spread on cake and enjoy.
