Meatballs And Cabbage Recipe
This is my husband's favorite dish. I always make this dish with buttered potatoes carrots and onions, green beans and cornbread.

Ingredients
  • 1 lb. ground beef
  • 3/4 cup rice
  • 1/2 cup chopped onion
  • 1 egg
  • 1 large can Campbell's tomato soup
  • 1 large soup can water
  • 1 medium head of cabbage, chopped coarsely

Directions
  1. Mix ground beef, onion, rice and egg until well blended. Form into 1/2 to 1 inch meatballs. Brown slightly in a skillet being careful when turning as to not break up the meatballs. Drain.
  2. Place meatballs in a dutch oven. Top with chopped cabbage.
  3. Mix Campbell's tomato soup and water. Pour over cabbage. Add salt and pepper.
  4. Bring to a boil on medium-high heat. Reduce heat to medium-low. Cook without stirring for 30 minutes.
  5. Stir and cook for 30 more minutes or until all the liquid is absorbed into the cabbage. You may add more water if needed.
  6. Let set for 15 to 30 minutes to thicken and for the cabbage to sop up the tomato soup.
