How to make it

  • Lightly grease 12 cup medium muffin tray.
  • Preheat oven to 220degC. Brush 4 sheets of filo with oil and layer on top of each other.
  • Cut into 6 equal squares and press into muffin holes. repeat with remaining pastry.
  • Combine spinach, garlic, haloumi, nutmeg and pine nuts in a bowl. Whisk eggs, cream together and season with salt and pepper. Stir into spinach mixture. Divide mixture evenly between filo cases.
  • Bake for 15-20mins until the tarts are golden brown and the filling is set.
