Haloumi And Spinach Tart

- 8 sheets filo pastry shopping list
- olive oil, for brushing shopping list
- 2 250g packets frozen spinach, thawed shopping list
- 2 garlic cloves, crushed shopping list
- 150g haloumi cheese, grated shopping list
- 1/4 tspn nutmeg shopping list
- 1/4 cup pine nuts shopping list
- 2 eggs shopping list
- 1/4 cup cream shopping list
How to make it
- Lightly grease 12 cup medium muffin tray.
- Preheat oven to 220degC. Brush 4 sheets of filo with oil and layer on top of each other.
- Cut into 6 equal squares and press into muffin holes. repeat with remaining pastry.
- Combine spinach, garlic, haloumi, nutmeg and pine nuts in a bowl. Whisk eggs, cream together and season with salt and pepper. Stir into spinach mixture. Divide mixture evenly between filo cases.
- Bake for 15-20mins until the tarts are golden brown and the filling is set.
