Chicken Stew Recipe
This is a quick to toss together, fast cooking very tasty stew. Absolutely bonkers about it in this house.

Ingredients
  • Approx 2 cups of chicken breasts diced up into bite sized pieces.
  • 2 cups chicken broth
  • 4 cups diced potatoes, skin on or off as desired
  • 1 1/2 cups carrots
  • 1 cup onion diced
  • 1 clove garlic (I double this for our tastes)
  • 1 (15 or so oz can diced tomatoes
  • 1 bayleaf
  • salt and pepper to taste
  • 1 ts thyme (italian seasoning works well also)
  • 1/4 cup or less oil ( I use less)

Directions
  1. Heat oil in large pot, saute onions for 2 minutes.
  2. Add all ingredients except chicken, potatoes and carrots
  3. Bring to a boil.
  4. Add potatoes, carrots, and chicken.
  5. Simmer covered until vegetables are done, about 30 minutes.
  6. Thicken with cornstarch if you like a thicker stew. (I have never needed this )
