How to make it

  • Combine plain sugar and wipping cream in a heavy sause pan. Cook over med. heat, stirring constantly until sugar melts and mixture comes to a simmer (do NOT boil). Remove from heat.
  • next combine egg yolks and vanilla in a bowl.Gradualy add about one fourth of wipping cream mixture to eggs; add the remaining hot cream mixture stiring constantly. Pour custard into 4 once remekins. Place remekins in a large roastind pan; add hot water to pan to depth of 1 in. Bake at 350 degrees for 35 minutes, then remove from pan and place on wire rack to cool. cover and chill until ready to serve. When ready to serve place remekins on cookie sheet and sprinkle with brown sugar EVENLY over custard. Broil 5 1/2 in. from heat for about 3 to 4 min. or until sugar has melted. Cool on wire rack till sugar hardens.
