  • 1-1/2 pounds beef tenderloin firmed in freezer for 30 minutes and cut into cubes
  • 1 cup chopped arugula
  • 1/4 cup chopped parsley leaves
  • 1/3 cup extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions
  1. Combine all ingredients in a bowl and toss to combine then serve immediately.
