How to make it

  • Combine first 5 ingredients in skillet and cook over med. heat for 5 minutes or until onion is tender.
  • Add capers and sherry.
  • Remove from skillet and set aside.
  • Add fish to skillet and top with the veggie mixture.
  • Cover and cook on low for 10 minutes, or until fish flakes easily with a fork.

    I like these recipes you are posting - this sounds great. I think I would use this on Halibut - just because I have some in my freezer!
