Fish And Caper Sauce Recipe

Ingredients

4 medium tomatoes, peeled and chopped

1 medium onion, chopped

1 tsp. dried oregano

1 tsp. dried basil

1/4 tsp. garlic powder

2 tbl. capers

1 1/2 tsp. dry Sherry

4 fish fillets

Directions

Combine first 5 ingredients in skillet and cook over med. heat for 5 minutes or until onion is tender.

Add capers and sherry.

Remove from skillet and set aside.

Add fish to skillet and top with the veggie mixture.

Cover and cook on low for 10 minutes, or until fish flakes easily with a fork.
