Fish and Caper Sauce

- 4 medium tomatoes, peeled and chopped shopping list
- 1 medium onion, chopped shopping list
- 1 tsp. dried oregano shopping list
- 1 tsp. dried basil shopping list
- 1/4 tsp. garlic powder shopping list
- 2 tbl. capers shopping list
- 1 1/2 tsp. dry sherry shopping list
- 4 fish fillets shopping list
How to make it
- Combine first 5 ingredients in skillet and cook over med. heat for 5 minutes or until onion is tender.
- Add capers and sherry.
- Remove from skillet and set aside.
- Add fish to skillet and top with the veggie mixture.
- Cover and cook on low for 10 minutes, or until fish flakes easily with a fork.
