Ingredients
  • Hazelnut Sauce:
  • 1/2 Cup Ground Hazelnuts
  • 1-1/2 Cups Plain Yogurt
  • 1/4 teaspoon Dried Tarragon
  • 1/4 teaspoon Dried Sage
  • Crabs:
  • 1/4 Cup Butter
  • 1/4 teaspoon Dried Tarragon
  • 1/4 teaspoon Dried Sage
  • 1 Cup Fresh Bread Crumbs
  • 12 Soft-Shell Crabs
  • Oil for the Grill

Directions
  1. For Sauce:
  2. Stir hazelnuts into yogurt in a small bowl.
  3. Mix in tarragon and sage.
  4. Cover and refrigerate until grilling time,then bring to room temperature while crabs cook.
  5. For Crabs:
  6. Melt butter and stir in tarragon and sage.
  7. Brush both sides of crabs with flavored butter.
  8. Sprinkle crabs with bread crumbs.
  9. Prepare grill,and when hot,place the crabs on grill rack,brushing with oil,about 4 to 6 inches from heat source.
  10. Cook for about 6 minutes,turning once.
  11. The Crabs will turn a reddish color when done.
  12. Put two crabs on each individual plate.
  13. Stir sauce and spoon a dollop of it onto each plate.
  14. Serve hot.
