How to make it

  • Stir in a bowl, vinegar,beer,2 Tablespoons of fresh marjoram,2 Tablespoons oil,garlic,1/2 teaspoon salt,1/2 teaspoon pepper.
  • Place the steaks in a plastic bag,add the vinegar-beer mixture,seal,marinate in the refrigerator at least 6 hours,turning steak over a couple of times.
  • Cook potato wedges,covered in boiling water for 4 minutes,drain.
  • Combine the potatoes and sweet pepper in a bowl,sprinkle with 2 Tablespoons oil,1 Tablespoon fresh marjoram,1/4 teaspoon salt,1/4 teaspoon pepper,toss to coat.
  • Drain meat,discard marinade.
  • Grease grill rack.
  • Place meat and potatoes,and sweet pepper on the grill.
  • Grill covered, for about 14 to 18 minutes,turning meat and vegetables once.
  • Carve the steak across the grain into 1/4" thick slices,placing them on a platter.
  • Arrange the potatoes and sweet peppers around steak.
  • Drizzle with half of the onion sauce,serving remaining sauce on the side.
  • Sprinkle with the remaining fresh marjoram.

  • Every time you grill a steak,you repeat the ritual that gave the meat its name.When the Saxons and Jutes invaded England in the fifth century,they cooked their beef on pointed sticks over campfires,calling it ~Steik~which means meat on a stick.
