Ingredients
  • 1/2 Cup Cider Vinger
  • 1/4 Cup Dark Beer
  • 5 Tablespoons Fresh Marjoram,chopped fine
  • 2 Tablespoons Olive Oil
  • 1 Clove Galic,minced
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 2 Pounds of Sirloin Steak,cut to about 1-1/2 inches thick
  • 3 Baking Potatoes,cut lengthwise,then in 8 wedges
  • 1 Each,Yellow,orange,Green,Red Sweet Peppers,cut in 1" wide rings
  • 2 Tablespoon Olive Oil
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper
  • FOR THE ONION SAUCE:
  • 1 Cup Onion,chopped
  • 1 Clove Garlic,minced
  • 1 Tablespoon Butter
  • 1/2 Cup Dark Beer
  • 1/2 cup Beef Broth
  • 1 Tablespoon Worcestershire Sauce
  • 1 Tablespoon Cornstarch
  • Cook onion,garlic,and butter in a pan for about 4 minutes or until the onions are tender.
  • Gradually stir the dark beer,beef broth,and worcestershire sauce into the cornstarch.
  • Add to the saucepan and cook,stirring until thickened and bubbly,about 2 minutes.

Directions
  1. Stir in a bowl, vinegar,beer,2 Tablespoons of fresh marjoram,2 Tablespoons oil,garlic,1/2 teaspoon salt,1/2 teaspoon pepper.
  2. Place the steaks in a plastic bag,add the vinegar-beer mixture,seal,marinate in the refrigerator at least 6 hours,turning steak over a couple of times.
  3. Cook potato wedges,covered in boiling water for 4 minutes,drain.
  4. Combine the potatoes and sweet pepper in a bowl,sprinkle with 2 Tablespoons oil,1 Tablespoon fresh marjoram,1/4 teaspoon salt,1/4 teaspoon pepper,toss to coat.
  5. Drain meat,discard marinade.
  6. Grease grill rack.
  7. Place meat and potatoes,and sweet pepper on the grill.
  8. Grill covered, for about 14 to 18 minutes,turning meat and vegetables once.
  9. Carve the steak across the grain into 1/4" thick slices,placing them on a platter.
  10. Arrange the potatoes and sweet peppers around steak.
  11. Drizzle with half of the onion sauce,serving remaining sauce on the side.
  12. Sprinkle with the remaining fresh marjoram.
  13. ~Note~
  14. Every time you grill a steak,you repeat the ritual that gave the meat its name.When the Saxons and Jutes invaded England in the fifth century,they cooked their beef on pointed sticks over campfires,calling it ~Steik~which means meat on a stick.
