Ingredients
  • 1-1/2 cups chocolate wafer crumbs
  • 1/4 cup butter melted
  • 2 tablespoons unflavored gelatin
  • 3/4 cup cold water
  • 1 can cherry pie filling
  • 1/3 cup almond flavored liqueur divided
  • 8 ounces cream cheese softened
  • 1/3 cup granulated sugar
  • 1 cup sour cream
  • 1 cup whipping cream whipped
  • Chocolate shavings and mint leaves for garnish if desired

Directions
  1. Combine wafer crumbs and butter then press onto bottom of spring form pan.
  2. Sprinkle gelatin over cold water in small saucepan then let stand 1 minute.
  3. Dissolve in microwave about 1 minute or in small pan on stove top.
  4. Add 1/4 cup gelatin mixture to the cherry pie filling then stir in 2 teaspoons almond liqueur.
  5. Pour cherry mixture over chocolate crust then refrigerate until set about 30 minutes or so.
  6. Beat cream cheese and sugar together in a large bowl with mixer at high speed until fluffy.
  7. Stir in sour cream then add remaining gelatin mixture and liqueur.
  8. Fold in whipped cream then spread over cherry base and refrigerate 4 hours or overnight.
  9. Remove from pan and place on serving dish and garnish with chocolate and mint leaves.
