How to make it

  • Combine wafer crumbs and butter then press onto bottom of spring form pan.
  • Sprinkle gelatin over cold water in small saucepan then let stand 1 minute.
  • Dissolve in microwave about 1 minute or in small pan on stove top.
  • Add 1/4 cup gelatin mixture to the cherry pie filling then stir in 2 teaspoons almond liqueur.
  • Pour cherry mixture over chocolate crust then refrigerate until set about 30 minutes or so.
  • Beat cream cheese and sugar together in a large bowl with mixer at high speed until fluffy.
  • Stir in sour cream then add remaining gelatin mixture and liqueur.
  • Fold in whipped cream then spread over cherry base and refrigerate 4 hours or overnight.
  • Remove from pan and place on serving dish and garnish with chocolate and mint leaves.
