This is great in anything you would use honey for. Is especially good with mint as the herb and in Ice Tea. or with lavender drizzled over lavender bread. this honey has a suttle taste not over powering

Ingredients
  • 1 T. fresh herb (or 1 t. dried herb)
  • 1 pint honey

Directions
  1. Try one of the following herbs in honey:
  2. Thyme, Lavender, mint, rosemary or you can even use rose petals. Bruise the fresh leaves slightly and place them in the bottom of a small saucepan.
  3. Pour room temperature honey into the pan and heat over low heat very slowly.
  4. Stir the mixture until the honey is just warm, about 2 minutes or so. Pour the mixture into sterilized jars and seal tightly.
  5. Store the jars at room temperature for about one week to make sure the flavors blend well.
  6. After one week, strain out the herb(s) and recap.
  7. (I use small jelly jars).
  8. To give as gifts, tie a decorative ribbon on the jar and make sure you label.
