How to make it

  • Brush zucchini eggplant and onion with olive oil;season with salt and pepper
  • Preheat grill to medium.Plave vegetables on rack over heat. Cover and grill 5 to 8 mins. cut vegetables in pieces
  • Serve with the mole sauce,toasted tortillas,avocado slices,sour cream,cheese and cilantro.
  • To toast tortillas: Brush both sides with 1 Tbs olive oil. Place on baking sheet . Heat in 425 oven 8 mins or till golden. Or,after brushing with oil,grill directly over med. 30 seconds each side or till warmed.
