Grilled Vegetable Tostadas With Quick Mole Sauce Recipe
Delicious grrilled vegetable tostadas with a tasty mole sauce.

  • 1 recipe quick mole sauce(posted)
  • 4 med. zucchini and or yellow squash,quartered lengthwise
  • 1 med. eggplant,cut in 1/2" slices
  • 1 large red onion,cut in 1/2" slices
  • 2Tbs olive oil
  • 16 toasted corn tortillas
  • 1 8oz. carton sour cream
  • 1 cup crumbled queso fresco,feta or ricatta salada cheese
  • avocado slices and or fresh cilantro

Directions
  1. Brush zucchini eggplant and onion with olive oil;season with salt and pepper
  2. Preheat grill to medium.Plave vegetables on rack over heat. Cover and grill 5 to 8 mins. cut vegetables in pieces
  3. Serve with the mole sauce,toasted tortillas,avocado slices,sour cream,cheese and cilantro.
  4. To toast tortillas: Brush both sides with 1 Tbs olive oil. Place on baking sheet . Heat in 425 oven 8 mins or till golden. Or,after brushing with oil,grill directly over med. 30 seconds each side or till warmed.
