Grilled Vegetable Tostadas with Quick Mole Sauce

- 1 recipe quick mole sauce(posted) shopping list
- 4 med. zucchini and or yellow squash,quartered lengthwise shopping list
- 1 med. eggplant,cut in 1/2" slices shopping list
- 1 large red onion,cut in 1/2" slices shopping list
- 2Tbs olive oil shopping list
- 16 toasted corn tortillas shopping list
- 1 8oz. carton sour cream shopping list
- 1 cup crumbled queso fresco,feta or ricatta salada cheese shopping list
- avocado slices and or fresh cilantro shopping list
How to make it
- Brush zucchini eggplant and onion with olive oil;season with salt and pepper
- Preheat grill to medium.Plave vegetables on rack over heat. Cover and grill 5 to 8 mins. cut vegetables in pieces
- Serve with the mole sauce,toasted tortillas,avocado slices,sour cream,cheese and cilantro.
- To toast tortillas: Brush both sides with 1 Tbs olive oil. Place on baking sheet . Heat in 425 oven 8 mins or till golden. Or,after brushing with oil,grill directly over med. 30 seconds each side or till warmed.
