Baked Italian Chicken

- 4 boneless skinless chicken breast halves shopping list
- 1/4 cup olive oil shopping list
- 1 cup fine breadcrumbs shopping list
- 1/2 cup Italian salad dressing shopping list
- 2 cups marinara sauce shopping list
- 1/2 cup sliced mozzarella cheese shopping list
- 1/3 cup chopped tomatoes shopping list
- 1-1/2 teaspoons dried Italian seasoning shopping list
- parmesan cheese shopping list
- Marina Sauce: shopping list
- 1 large white onion chopped fine shopping list
- 1 carrot grated shopping list
- 1/2 cup butter shopping list
- 5 ripe tomatoes quartered shopping list
- 1/4 cup chopped fresh basil shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1-1/2 teaspoons sugar shopping list
- 2 cups chicken stock shopping list
How to make it
- Preheat oven to 350 then heat olive oil in large frying pan.
- Dip chicken in salad dressing then in bread crumbs and brown in oil.
- Sauté onions and carrots in butter then stir in tomatoes, basil, salt, pepper and sugar.
- Cover and simmer 15 minutes then puree in blender
- Transfer chicken to shallow baking dish then spoon marina sauce over top.
- Top with sliced mozzarella then chopped tomatoes.
- Sprinkle with herbs and a generous shake of parmesan cheese then bake 45 minutes.
