How to make it

  • Preheat oven to 350 then heat olive oil in large frying pan.
  • Dip chicken in salad dressing then in bread crumbs and brown in oil.
  • Sauté onions and carrots in butter then stir in tomatoes, basil, salt, pepper and sugar.
  • Cover and simmer 15 minutes then puree in blender
  • Transfer chicken to shallow baking dish then spoon marina sauce over top.
  • Top with sliced mozzarella then chopped tomatoes.
  • Sprinkle with herbs and a generous shake of parmesan cheese then bake 45 minutes.
