PECAN TOPPED CARAMEL APPLE CHEESECAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Parsons Estate in Kaufman, Texas in 1994.

Ingredients
  • 21 ounce can apple pie filling
  • 1 teaspoon rum extract
  • 1 graham cracker crust
  • 16 ounces cream cheese softened
  • 1/4 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/4 cup caramel topping
  • 12 pecan halves
  • 2 tablespoons chopped pecans

Directions
  1. Preheat oven to 350.
  2. Add rum extract to pie filling and mix well then reserve 3/4 cup filling mixture.
  3. Spoon remaining filling mixture into crust and spread evenly.
  4. In mixing bowl beat together softened cream cheese, vanilla and sugar.
  5. Beat until mixture is smooth then add eggs and mix well.
  6. Pour this mixture over apple pie filling in crust and bake 45 minutes.
  7. Remove from oven and cool completely.
  8. In small saucepan mix reserved filling mixture with caramel topping.
  9. Simmer over low heat for 1 minute then spoon sauce onto cheesecake and spread evenly.
  10. Arrange pecan halves around edge and sprinkle with chopped pecans.
  11. Refrigerate until serving time.
