Coconut Toffee Recipe
Makes about 40 pieces. a favourite amongst children, they will definitly be eager to get more. the toffee can be kept for months.

Ingredients
  • 1 can (400g) condensed milk
  • 1 teacup firmly packed grated fresh coconut
  • 3/4 teacup sugar
  • 115 grams chopped walnuts
  • 2 tablespoon ghee or butter

Directions
  1. Mix the condensed milk, sugar and coconut and put the mixture in a thick vessel
  2. when the mixture starts boilin, add the ghee/butter
  3. keep stirring and cooking till the mixture turns golden brown
  4. add the chopped walnuts and mix well
  5. spread the mixture on a greased cake pan
  6. press and level by pressing with a wet cloth
  7. after 5 mins, cut the toffee into small pieces and remove when cold

This sounds wonderful but I am not much of a walnut fan - wonder if you could substitute almonds or pecans instead?? What do you think?
