How to make it

  • Grill capsicum, skin side up until charred and blackened. Remove and wrap in foil- steaming the capsicum and making it easier to remove the skin.
  • Set aside to cool for 10mins, and then peel and chop.
  • Meanwhile, mark a cross in the base of each tomato and place in a large bowl. Cover with boiling water for 2 mins. Drain and peel. Cut into quarters and remove seeds and roughly chop.
  • Place capsicum, tomato and chilli into a saucepan with onion and ginger. Add sugar and vinegar, and stir well.
  • Bring to the boil, reduce heat and simmer for 40mins until thick and jam-like.
