Chilli Jam

- 4 red capsicum shopping list
- 6 ripe tomatoes shopping list
- 8 long red chillis shopping list
- 1 onion, chopped shopping list
- 2 tsp ginger, grated shopping list
- 2 cups cugar shopping list
- 1/2 cup white vinegar shopping list
How to make it
- Grill capsicum, skin side up until charred and blackened. Remove and wrap in foil- steaming the capsicum and making it easier to remove the skin.
- Set aside to cool for 10mins, and then peel and chop.
- Meanwhile, mark a cross in the base of each tomato and place in a large bowl. Cover with boiling water for 2 mins. Drain and peel. Cut into quarters and remove seeds and roughly chop.
- Place capsicum, tomato and chilli into a saucepan with onion and ginger. Add sugar and vinegar, and stir well.
- Bring to the boil, reduce heat and simmer for 40mins until thick and jam-like.
