Ingredients
  • 4 red capsicum
  • 6 ripe tomatoes
  • 8 long red chillis
  • 1 onion, chopped
  • 2 tsp ginger, grated
  • 2 cups cugar
  • 1/2 cup white vinegar

Directions
  1. Grill capsicum, skin side up until charred and blackened. Remove and wrap in foil- steaming the capsicum and making it easier to remove the skin.
  2. Set aside to cool for 10mins, and then peel and chop.
  3. Meanwhile, mark a cross in the base of each tomato and place in a large bowl. Cover with boiling water for 2 mins. Drain and peel. Cut into quarters and remove seeds and roughly chop.
  4. Place capsicum, tomato and chilli into a saucepan with onion and ginger. Add sugar and vinegar, and stir well.
  5. Bring to the boil, reduce heat and simmer for 40mins until thick and jam-like.
