Ingredients
  • 1 can corn kernels, drained
  • 1 small or medium tomato, diced
  • 1 small or medium avocado, diced
  • 2 thin slices sweet onion (Vandalia or Walla Walla), finely chopped
  • 1/2 garlic clove, crushed
  • 1 tablespoon vinegar
  • 1 tablespoon olive oil
  • 1/2 cup chopped fresh cilantro
  • salt and pepper to taste

Directions
  1. Mix all the ingredients together in a medium bowl.
  2. Refrigerate for at least 1/2 hour.
