Potsdam Bread Recipe
Bread from a Potsdam baking seminar from Germany. This recipe uses fresh cake yeast and makes several loaves or one huge one

Ingredients
  • 2 cakes fresh yeast
  • 1 Tbs Sugar
  • 1/2 tsp z Salt
  • 1 kg Flour
  • 750 ml lukewarm water
  • Variations: olives, sun dried tomatoes, rosemary
  • Or: dried cranberries and more sugar in the recipe to make it sweeter

Directions
  1. In a large bowl, combine sugar and salt along with the crumbled yeast and warm water.
  2. Mix in flour and let stand 30 minutes in a warm place.
  3. It will rise very puffy in the bowl
  4. Stir the dough down and then form dough either as round loaves or one large rectangle on a baking sheet.
  5. Let rise another 30 minutes.
  6. Then bake 230C for 30 to 40 minutes
  7. To make variations: Just before baking, stir in the desired additions.

Midge, this sounds great. I never used fresh yeast cakes before! Hoping I can use dry yeast instead?
