Carrots With Shallots

- 1 teaspoon coarse salt plus more for water shopping list
- 2 pounds carrots peeled and cut crosswise on the diagonal into 1” pieces shopping list
- 4 tablespoons unsalted butter shopping list
- 4 large shallots thinly sliced into rings shopping list
- 1/4 cup honey shopping list
- 2 tablespoons Dijon mustard shopping list
How to make it
- Bring a medium saucepan of salted water to a boil.
- Add carrots and cook until tender about 15 minutes then drain well and set aside.
- Melt butter in a medium skillet over medium high heat.
- Add shallots and cook stirring occasionally until beginning to brown about two minutes.
- Add honey, mustard and salt then stir to combine.
- Add carrots and heat through then serve immediately.
