How to make it

  • Spray large skillet with cooking spray then heat over medium heat until hot.
  • Sauté vegetables until crisp tender about 10 minutes.
  • Add herbs and red pepper then cook 2 minutes longer.
  • Add broth to skillet and heat to boiling then reduce heat and simmer covered 20 minutes.
  • Season with salt and pepper and serve.
