K80s Perfect Chili

- 1 large can black beans shopping list
- 1 large can white kidney beans shopping list
- 1 large can red kidney beans shopping list
- 1 regular can maple style baked beans shopping list
- 1 medium can sweet corn shopping list
- 1 very large can diced/stewed tomatoes (double the size of a can of beans) shopping list
- 1 habanero pepper shopping list
- 1-3 jalapeno pepper shopping list
- 1 anaheim pepper shopping list
- 1 poblano pepper shopping list
- 1 yellow bell pepper shopping list
- 1 red bell pepper shopping list
- 1 orange bell pepper shopping list
- 2 large sweet onions shopping list
- 2 lbs ground meat (I use moose, you can use beef, buffalo, pork, chicken, whatever you like) shopping list
- honey shopping list
- chili powder shopping list
- chipotle powder (I use Victorian Epicure, it's worth it's weight in gold) shopping list
- allspice (this is the kicker) shopping list
How to make it
- Take all the larger peppers (so leave the habanero and jalapenos on the counter) and char the skins of the peppers on either a bbq or a gas flame, but do not char the flesh. once the skin is black, put the now very hot peppers into a glass or metal bowl and put plastic wrap overtop tightly to seal in the steam, and let those skins sweat off. Once they are cool enough to handle, peel the skins and cores off the peppers, and dice the flesh.
- PUT ON RUBBER/MEDICAL GLOVES!! and finely dice the hot peppers, your choice if you wish to keep the seeds and veins, those will add more heat. Put these with the other peppers.
- Dice the onions, and begin to caramelize in a frying pan with some butter or margarine, but do not make them brown all over, leave some body to the onions so they can stand up to the cooking time they will get in the chili. Place to the side.
- Start your large dutch oven/soup pot on medium high heat and start adding your meat, and begin to brown this off. Once that has happened, add your RINSED beans to the pot, just dont rinse the maple style ones! add the onions, the peppers, tomatoes, and corn to the mixture.
- Then begin to add your seasonings. This will all be to preference, again I cannot tell you how much of what because I go by taste. But approximately a 1/4 cup chili powder, a couple tablespoons of chipotle powder, and a couple teaspoons of allspice. A couple tablespoons of honey will do, but I like sweeter chili, so this one is up to you. trust your tastebuds, not my recipe!
