How to make it

  • Preheat oven to 325.
  • Peel the banana and cut lengthwise, then crosswise into half-slices.
  • Spray cooking spray inside a 1 1/2 quart souffle dish and line bottom with banana slices.
  • Heat cream and buttermilk in saucepan or in top of double boiler until hot. Add sugar, stirring until it dissolves.
  • Beat yolks thoroughly with vanilla. Spoon a few tablespoons of the hot cream mixture into egg yolk mixture, whisking thoroughly.
  • Slowly pour in remainder of cream mixture, stirring continually.
  • Pour combined cream and egg yolk mixture over bananas. Place souffle dish inside a larger pot, filling larger pot with water halfway up the side of souffle dish.
  • Place in oven and bake for 1 hour to 1 hour and 15 minutes.
