How to make it

  • Place the cheese, milk, vanilla and 1/4 cup sugar in a food processor and blend smooth
  • Combine expresso, 2 tbs sugar and stir to dissolve sugar
  • Dip each lady finger in the coffee mixture and working quickly place 1/2 of them in an 8 x 8 inch pan
  • spread half the cheese mixture on top
  • Dust 1 tsp cocoa over the cheese layer
  • Repeat with the remaining ladyfingers, cheese layer another dusiting of cocoa
  • Cover with plastic wrap and chill 6 hours or overnight before serving
