Mr Steves Zucchini Cake

This zucchini cake adds a new dimension to your basic zucchini bread. The moistness and slight sweetness makes it a great accompaniment to a nice cup of red, white or green tea,
Ingredients
- 2 cups grated zucchini shopping list
- 3 eggs shopping list
- 2 3/4 cups flour shopping list
- 1/4 cup wheat germ shopping list
- 3/4 cup oil shopping list
- 3 TSP cinnamon shopping list
- 2 cups sugar shopping list
- 3 TSP vanilla shopping list
- 1 TSP baking soda shopping list
- 1/2 TSP baking powder shopping list
- 1 cup chopped walnuts shopping list
- 1 TSP salt shopping list
- 1/2 TSP nutmeg shopping list
- 1 cup chocolate chips shopping list
How to make it
- In a large bowl, sift the dry ingredients together with a whisk, flour, wheat germ, cinnamon, sugar, baking soda, baking powder, salt and nutmeg.
- Cream together the eggs and oil until well blended.
- Add the zucchini and the vanilla to the blended mixture.
- Add the dry ingredients slowly into the mixture.
- Stir in the nuts and chocolate chips.
- Pour batter into a well-greased bundt pan.
- Bake 350 degress for 45 - 55 minutes.
- It is done when the cake tester comes out clean.
