Garbanzo Bean Bruschetta

- 1 can garbanzo beans, rinsed and drained shopping list
- ~6 plum tomatoes, rinsed and diced shopping list
- 1/2 small red onion chopped shopping list
- handful of basil (about 8-10 leaves) chopped shopping list
- 2 cloves garlic, chopped shopping list
- balsamic vinegar shopping list
- olive oil shopping list
- Sprinkle of sea salt shopping list
- Sprinkle of pepper shopping list
How to make it
- The bulk of this recipe is prep time. Once everything is washed and chopped, simply toss it together.
- Toss the tomatoes, chickpeas, onion and basil together first.
- Add a light coating of olive oil and balsamic vinegar (~1 tablespoon--I don't measure)
- Toss again
- Serve with sliced italian bread and/or crostinis.
