Garbanzo Bean Bruschetta Recipe
A great way to start a larger meal--always impresses and pleases. The garbanzos add a nice bit of extra "meat" to the meal.

Ingredients
  • 1 can garbanzo beans, rinsed and drained
  • ~6 plum tomatoes, rinsed and diced
  • 1/2 small red onion chopped
  • handful of basil (about 8-10 leaves) chopped
  • 2 cloves garlic, chopped
  • Balsamic vinegar
  • Olive Oil
  • Sprinkle of sea salt
  • Sprinkle of pepper

Directions
  1. The bulk of this recipe is prep time. Once everything is washed and chopped, simply toss it together.
  2. Toss the tomatoes, chickpeas, onion and basil together first.
  3. Add a light coating of olive oil and balsamic vinegar (~1 tablespoon--I don't measure)
  4. Toss again
  5. Serve with sliced italian bread and/or crostinis.
