Steak in peppercorn sauce

- 2 thick cut sirloin steak - think that might be porterhouse in USA (or use eye fillet, or scotch fillet. Just use the best quality beef you can buy) shopping list
- 125ml cream (we get one type in New Zealand, so a mix between English single and double types) shopping list
- 2 tbsp marinated green peppercorns shopping list
- 1 double measure good brandy shopping list
- salt and pepper to taste shopping list
How to make it
- Rub steak with some salt and ground pepper to season
- In a non-stick pan, fry steak according to your preference (medium rare is great iwth this dish). You can do this in a little oil but it's not necessary really.
- Set steak to one side and keep warm
- In pan, add green peppercorns and brandy. Flame the brandy (easy on gas over high heat, otherwise show it a lighter and stand back!)
- Once flames die back, add cream and heat through, stirring to dislodge the yummies on the bottom of the pan.
- Set steak on plate and pour over sauce.
- Serve with steamed vegetables, or if you got home early enough, some roasted potato.

What more does a great steak really need to
create a 'taste thrill' BUT...green peppercorns
cream and Brandy, for the final finish before serving??? Oh, I know...a really Grand Wine!
