How to make it

  • Rub steak with some salt and ground pepper to season
  • In a non-stick pan, fry steak according to your preference (medium rare is great iwth this dish). You can do this in a little oil but it's not necessary really.
  • Set steak to one side and keep warm
  • In pan, add green peppercorns and brandy. Flame the brandy (easy on gas over high heat, otherwise show it a lighter and stand back!)
  • Once flames die back, add cream and heat through, stirring to dislodge the yummies on the bottom of the pan.
  • Set steak on plate and pour over sauce.
  • Serve with steamed vegetables, or if you got home early enough, some roasted potato.
