Ingredients
  • 1 (15 oz.) can cannellini beans(use with liquid)
  • 1/4 c. of elbow macaroni
  • 1 sliced leek
  • 2 chopped carrots
  • 1 thinly sliced zucchini
  • 4 oz. of 1 inch pieces green beans
  • 2 stalks of thinly sliced celery
  • 1 1/2 qts. of vegetable stock
  • 1 lb. of chopped tomatoes
  • 3 tbs. of olive oil
  • salt and ground black pepper

Directions
  1. First you wan to add some olive oil to a pan over medium flame.
  2. Saute your leeks, carrots, zucchini, green beans and celery.
  3. Place a lid on the pan and keep over a low flame for around 15 min.
  4. Stir your pan occasionally.
  5. Now you can stir in your stock, tomatoes and thyme.
  6. Let this come to a boil then put your lid back on the pot and lower the flame to low for around 30 min.
  7. Add your cannellini beans with the liquid and your pasta.
  8. Keep this over a low flame for 10 min.
  9. Add any extra seasonings(salt and pepper) and ladle into serving bowls!
