Simple Minestrone

- 1 (15 oz.) can cannellini beans(use with liquid) shopping list
- 1/4 c. of elbow macaroni shopping list
- 1 sliced leek shopping list
- 2 chopped carrots shopping list
- 1 thinly sliced zucchini shopping list
- 4 oz. of 1 inch pieces green beans shopping list
- 2 stalks of thinly sliced celery shopping list
- 1 1/2 qts. of vegetable stock shopping list
- 1 lb. of chopped tomatoes shopping list
- 3 tbs. of olive oil shopping list
- salt and ground black pepper shopping list
How to make it
- First you wan to add some olive oil to a pan over medium flame.
- Saute your leeks, carrots, zucchini, green beans and celery.
- Place a lid on the pan and keep over a low flame for around 15 min.
- Stir your pan occasionally.
- Now you can stir in your stock, tomatoes and thyme.
- Let this come to a boil then put your lid back on the pot and lower the flame to low for around 30 min.
- Add your cannellini beans with the liquid and your pasta.
- Keep this over a low flame for 10 min.
- Add any extra seasonings(salt and pepper) and ladle into serving bowls!
