Ingredients
  • 3/4 Kg pork Liempo
  • 1/2 bagoong or shrimp paste
  • 1/4 cup vinegar
  • 2 green chilles chopped into halves
  • 3 cloves garlic chopped
  • 2 Tbsp. sugar
  • 2 medium sized eggplants chopped into s\desired shape

Directions
  1. Brown garlic in a pan with oil.
  2. add shrimp paste and then saute for about 3 mins.
  3. add chopped pork, saute.
  4. add 1 1/2 cup of water, cover pan
  5. when water starts boiling, set stove to minimal for 30 mins. heat to make the pork tender.
  6. add chopped eggplants, let boil for 5 mins.
  7. add sugar, mix well, simmer for about 5 mins.
  8. Serve with rice

This shouldn't be a soupy dish, be careful in adding up water when boiling the pork. the grease of the pork should serve as its sauce, along with the shrimp paste.
