This is a nice change of pace when you are wanting something with a little heat, yet is creamy and eggy and just delightful on the breakfast platter. Enjoy

Ingredients
  • 8 slightly beaten eggs
  • 1 pint ricotta cheese
  • 2 cups grated white cheddar cheese
  • 1 cup all purpose baking mix
  • 1/2 tablespoon basil
  • 4 tablespoons melted butter
  • 1 cup milk
  • 1 small jalapeno pepper diced

Directions
  1. Preheat oven to 350 then grease a rectangular baking dish.
  2. Mix all ingredients and pour into baking dish then bake 50 minutes.
