How to make it

  • Spray small saucepan with cooking spray then heat over medium heat until hot.
  • Sauté onion and garlic until tender about 4 minutes.
  • Stir in sour cream, mustard and lemon juice then heat over low heat until hot.
  • Season with salt and pepper then spoon sour cream mixture over beets and stir gently.
  • Sprinkle with parsley then serve while warm.
