Dijon Beets

These are delightful beets that always get rave reviews when I serve them. Hope you enjoy as much as we do.
Ingredients
- butter flavored vegetable cooking spray shopping list
- 1/3 cup finely chopped white onion shopping list
- 2 cloves garlic minced shopping list
- 1/3 cup sour cream shopping list
- 2 tablespoons Dijon mustard shopping list
- 3 teaspoons lemon juice shopping list
- 1/4 teaspoon salt shopping list
- 1/2 teaspoon white pepper shopping list
- 1-1/2 pounds beets cooked peeled and sliced shopping list
- Minced parsley for garnish shopping list
How to make it
- Spray small saucepan with cooking spray then heat over medium heat until hot.
- Sauté onion and garlic until tender about 4 minutes.
- Stir in sour cream, mustard and lemon juice then heat over low heat until hot.
- Season with salt and pepper then spoon sour cream mixture over beets and stir gently.
- Sprinkle with parsley then serve while warm.
