Apricot Cheesecake With Lavendar

- For the base crust: shopping list
- 275 g flour shopping list
- 1 tsp baking powder shopping list
- 200 g butter shopping list
- 100 g sugar shopping list
- 20 g ground almonds shopping list
- The Filling shopping list
- 600 g fresh apricots shopping list
- 3 eggs shopping list
- 30 g flour shopping list
- 100 g butter shopping list
- 100 g sugar shopping list
- 150 g Double-cream cheese shopping list
- 1 small fresh lemon (or eqivielent in lemon flavor) zest and juice shopping list
- 2 Tbs fresh chopped lavender leaves or could be dried shopping list
How to make it
- Make a meurbeteig dough by mixing the flour, baking powder, butter, sugar and almonds together into a soft dough.
- Uisng your hands press the mixture into a greased 26 cm springform pan.
- Prick dough with a fork
- Clean apricots, cut in half and line the dough with them
- Bake in a 180C oven about 30 minutes
- In the meantime, melt the butter and cool
- Separate the eggs and beat yolks with the sugar until frothy.
- Mix the butter, flour and cream cheese together
- Mix in the lemon peel and lavendar
- Beat the whites stiff and fold gently into cheese mixture
- Remove pan from the oven, spread on the cheese mixture, return to oven and bake 25 to 30 minutes more
- Cool completely before slicing
- Do not omit either lemon or lavendar for this tasty recipe !
