Ingredients
  • quart or pint canning jars with lids
  • waterbath or pressure canner
  • ******
  • PER QUART:
  • 3 and 1/4 pounds of tomatoes
  • olive oil
  • 2 Tablespoons of lemon juice
  • 1/2 teaspoon salt (optional)
  • ******
  • PER PINT:
  • 1 and 3/4 pounds of tomatoes
  • olive oil
  • 1 Tablespoon of lemon juice
  • 1/4 teaspoon of salt (optional)

Directions
  1. Before canning, blanch, peel, and deseed the fruit.
  2. In a large pot, add a little olive oil and bring the tomatoes to a boil. Crush them with a spoon as they cook for 5 minutes
  3. Before canning add lemon juice and salt to jars.
  4. Can using the hot pack method with 1/2" of head space. Place tomatoes in jar and press down until they are covered in juice and no air pockets remain.
  5. WATER BATH: process for 40 mintues
  6. PRESSURE CANNER: process for 15 minutes at 10lbs

Great and thanks for the link... I have family who is wanting to use my canner to put up some deer meat.. That site should help them..
