Canned crushed tomatoes

- quart or pint canning jars with lids shopping list
- waterbath or pressure canner shopping list
- ****** shopping list
- PER QUART: shopping list
- 3 and 1/4 pounds of tomatoes shopping list
- olive oil shopping list
- 2 Tablespoons of lemon juice shopping list
- 1/2 teaspoon salt (optional) shopping list
- ****** shopping list
- PER PINT: shopping list
- 1 and 3/4 pounds of tomatoes shopping list
- olive oil shopping list
- 1 Tablespoon of lemon juice shopping list
- 1/4 teaspoon of salt (optional) shopping list
How to make it
- Before canning, blanch, peel, and deseed the fruit.
- In a large pot, add a little olive oil and bring the tomatoes to a boil. Crush them with a spoon as they cook for 5 minutes
- Before canning add lemon juice and salt to jars.
- Can using the hot pack method with 1/2" of head space. Place tomatoes in jar and press down until they are covered in juice and no air pockets remain.
- WATER BATH: process for 40 mintues
- PRESSURE CANNER: process for 15 minutes at 10lbs
