Blackberry Streusel Muffins

- 1/4 cup slivered almonds shopping list
- 1/4 cup firmly packed brown sugar shopping list
- 3 tablespoons all purpose flour divided shopping list
- 2 tablespoons butter shopping list
- 1/2 cup uncooked regular oats shopping list
- 2 cups all purpose flour shopping list
- 1/2 cup granulated sugar shopping list
- 2 teaspoons baking powder shopping list
- 1/4 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 2 teaspoons grated lemon rind shopping list
- 3/4 cup buttermilk shopping list
- 1/4 cup vegetable oil shopping list
- 1 large egg shopping list
- 1-1/2 cups fresh blackberries shopping list
How to make it
- Pulse almonds until chopped then add brown sugar and 1 tablespoon flour.
- Process 5 seconds then add butter and pulse until mixture is crumbly.
- Stir in oats and set aside.
- Combine 2 cups flour and next 5 ingredients in a large bowl.
- Make a well in center of mixture then whisk buttermilk, oil and egg.
- Add to flour mixture stirring just until moistened.
- Toss blackberries with remaining 2 tablespoons flour then gently fold into batter.
- Spoon batter into greased muffin pans and fill two-thirds full.
- Sprinkle batter with oat mixture then bake 15 minutes at 400.
- Remove immediately from pans and cool on wire racks.
