How to make it

  • In a large heavy skillet, cook the bacon over medium heat until crisp, transfer to a paper-lined plate
  • Drain off all but ¼ cup fat, return to heat and add the celery and onion, cook 5 minutes
  • Add the tomatoes, tuna (and the water its packed in), tomato paste, jalapeno, and 1 cup water
  • Simmer until thickened, about 20 minutes
  • Whisk in the file powder and remove from heat
  • Serve the gumbo over the rice and crumble the bacon on top

    file powder is ground sassafras leaves. I use the brand Zatarin's, and I get it in the seafood section at my grocery store
