Poor Mans Gumbo Recipe
Dont tell anyone this is just tuna from a jar, pass it off as flaked crab meat and no one will know the difference

Ingredients
  • 12 slices bacon
  • 2 celery ribs, chopped
  • 1 onion, chopped
  • 1 14.5-oz can diced tomatoes
  • 1 12-oz can tuna
  • ¼ cup tomato paste
  • 1 jalapeno, seeded and chopped
  • 1 tsp file powder
  • 1 ¼ cup rice, cooked

Directions
  1. In a large heavy skillet, cook the bacon over medium heat until crisp, transfer to a paper-lined plate
  2. Drain off all but ¼ cup fat, return to heat and add the celery and onion, cook 5 minutes
  3. Add the tomatoes, tuna (and the water its packed in), tomato paste, jalapeno, and 1 cup water
  4. Simmer until thickened, about 20 minutes
  5. Whisk in the file powder and remove from heat
  6. Serve the gumbo over the rice and crumble the bacon on top

What is file powder, please.


File powder is ground sassafras leaves. I use the brand Zatarin's, and I get it in the seafood section at my grocery store
