SPINACH STRAWBERRY AND ONION SALAD WITH SESAME SEED DRESSING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Benson Estate in Canton, Texas in 1987.

Ingredients
  • 1/3 cup sesame seeds
  • 1 tablespoon unsalted butter
  • 1/4 cup fresh parmesan cheese grated
  • 1 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon tarragon vinegar
  • 1 tablespoon granulated sugar
  • 1 clove garlic minced
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 red pepper seeded and thinly sliced
  • 1 cucumber peeled seeded and sliced
  • 1 red onion thinly sliced
  • 2 cups sliced strawberries
  • 1 large bag spinach gently torn into bite size pieces

Directions
  1. Melt butter in a saucepan and sauté sesame seeds until golden brown.
  2. Combine parmesan, sour cream, mayonnaise, vinegar, sugar, garlic, salt and pepper.
  3. Place green pepper, cucumber, red onion, strawberries and spinach lettuce in large bowl and toss.
  4. Just before serving pour dressing over salad and toss then sprinkle with sesame seeds.
