Ingredients
  • 1 lb flank steak
  • 1 cup mayo
  • 2 cups chopped romaine lettuce
  • 2 cups of red leaf lettuce
  • 1 mango cubed into 1/2 in pieces
  • 1/2 cup of red onion sliced thinly
  • 1 cup of jicama sliced into matchsticks
  • 1 roasted poblano cut into strips
  • 1 jalapeno cut into 1/4 in pieces
  • 1 large avocado cut anyway you like
  • 1 tsp parsely
  • 1/8 tsp garlic
  • 1/4 tsp onion powder
  • juice of 1/2 lime
  • 1-2 tsp of melinda's chipotle chili sauce
  • juice of 2 fresh limes
  • 1 tsp paprika
  • 1 tbs honey
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1 tsp of chili powder
  • 3 garlic cloves chopped fine

Directions
  1. Combine the mayo,juice of 1/2 lime,garlic powder,onion powder, parsely and melindas chipotle sauce mix well and set in refridgerator.
  2. Cut a diamond pattern about 1/4 in thick on one side of the flank steak. In a bowl combine juice of 2 limes, chili powder,paprika,honey,cumin,garlic and salt and marinate the flank steak for 2 hours. Grill flank steak for 5-7 minutes on each side and then remove and allow to stand 15 minutes. While waiting for the flank steak add lettuce, onion,mango,jicama,poblano, and jalapeno and mix in a serving bowl. Toss the mayo very lightly with this mixture then add some thin sliced flank steak and avacado.
