Pecan Carrot Cookies with orange icing

- 1 c. Land O Lakes Butter®, softened shopping list
- 1/2 c. sugar shopping list
- 1/2 c. brown sugar, packed shopping list
- 1 large egg shopping list
- 3 T. orange juice shopping list
- 1 T. grated orange peel shopping list
- 2 1/4 c. all-purpose flour shopping list
- 3/4 tsp. baking soda shopping list
- 1/2 tsp. salt shopping list
- 1 c. flaked coconut shopping list
- 1 c. chopped pecans shopping list
- 1 c. finely shredded carrots shopping list
- orange Frosting: shopping list
- Beat together... shopping list
- 2 c. powdered sugar shopping list
- 1 T. grated orange peel shopping list
- 2-3 T. orange juice (as needed for spreading consistency) shopping list
How to make it
- Preheat oven to 350 degrees.
- * Beat butter and sugars together until creamy. Add egg, orange juice and peel, continue mixing until blended well.
- * Mix in flour, soda and salt and beat on low until blended thoroughly. Stir in coconut, chopped pecans and carrots.
- * Drop dough onto ungreased cookie sheets with a Tablespoon, keeping cookies 2 inches apart. Bake for 10-12 minutes or until golden brown.
- * Cool completely before spreading with Orange Frosting and top with a pecan half if desired.
- Makes 3 1/2 dozen cookies
