Crab In Bourbon Sauce Over Poppy Seed Noodles Recipe
CRAB IN BOURBON CREAM SAUCE OVER POPPY SEED NOODLES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pittman Estate in Hurst, Texas in 1993.

Ingredients
  • 1 stick butter
  • 2 diced scallion green tops
  • 1 tablespoon minced garlic
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup bourbon
  • 1/4 cup white wine
  • 1/2 pint heavy cream
  • 1/2 cup grated pepper jack cheese
  • 2 cups crab meat
  • 4 cups cooked noodles
  • 3 tablespoons poppy seeds

Directions
  1. Sauté scallions and garlic in butter then add salt and pepper.
  2. Add bourbon and flame then cook until flame goes out then add wine and reduce to one half.
  3. Add cream then simmer until thick about 15 minutes.
  4. Add crab meat and heat through.
  5. Combine noodles and poppy seeds then serve noodles with crab meat mixture over top.
