HALIBUT WITH RHUBARB SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Woodson Estate in Bedford, Texas in 1990.

Ingredients
  • 1 tablespoon unsalted butter divided
  • 1 small carrot thinly sliced
  • 1 small white onion finely chopped
  • 2 rhubarb stalks thinly sliced
  • 1 large shallot finely chopped
  • 1/3 cup white wine
  • 1 cup clam juice
  • 12 ounce halibut fillet in one piece
  • 1 pound fresh spinach stemmed and washed

Directions
  1. Preheat oven to 325 then wrap halibut in foil and bake 40 minutes.
  2. Meanwhile in saucepan heat 1 teaspoon butter over medium heat until hot but still golden.
  3. Sauté carrot, onion, rhubarb and shallot 5 minutes then add wine and boil 10 minutes.
  4. Add clam juice and simmer 15 minutes until vegetables are very soft.
  5. Place spinach with any water clinging to leaves then cover and cook over medium for 5 minutes.
  6. Uncover and set aside then transfer vegetable mixture to a blender and purée.
  7. Gradually blend remaining butter into sauce then season sauce with salt and pepper.
  8. Gently squeeze most of water from spinach then arrange a bed of it on each of four plates.
  9. Add 1/4 of the halibut to each plate and spoon 1/4 of the sauce over each and serve immediately.
