TUNA SOUFFLÉ This recipe came from an estate sale. I obtained it when I purchased the family collection from the Woodson Estate in Bedford, Texas in 1990.

Ingredients
  • 1 small green bell pepper coarsely chopped
  • 1 small red bell pepper coarsely chopped
  • 1 tablespoon margarine
  • 1/4 cup all purpose flour
  • 1-1/2 cups milk
  • 10 ounces frozen whole kernel corn
  • 3/4 teaspoon dried dill weed
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper
  • 3 egg yolks lightly beaten
  • 6-1/2 ounce can tuna drained
  • 5 egg whites
  • 1/8 teaspoon cream of tartar

Directions
  1. Sauté bell peppers in margarine for 5 minutes then stir in flour and cook 2 minutes.
  2. Gradually blend in milk, corn, dill weed, salt and pepper then heat to boiling over medium heat.
  3. Remove from heat.
  4. Gradually stir in small amount of vegetables into egg yolks then stir yolks into vegetables.
  5. Mix in tuna then beat egg whites and cream of tartar in large bowl to stiff peaks.
  6. Fold into tuna mixture then pour into lightly greased soufflé dish.
  7. Bake uncovered at 350 for 45 minutes then serve immediately.

I love anything tuna. I can't wait to try this. I eat tuna or some sort of fish every day, so I'll have to try this, this week. I also like the combination of flavors. This will be really nice stuff, I reckon. Thanks for putting this one up. Cheers.


I LOVE that Costco now carries tuna in the 7oz size.
