Carrot Pineapple Muffins Recipe
These are really delicious, one of my favourite muffin recipes!

Ingredients
  • 1 cup carrot, raw and finely grated by hand (if you use a food processor, be sure to cut carrots into small pieces first)
  • 1 cup sugar
  • 1 1/2 cups all-purpose flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup crushed tinned pineapple with juice
  • 2/3 cup vegetable oil

Directions
  1. Preheat oven to 350F. Grease well 24 medium muffin cups.
  2. In a large bowl, mix or sift together dry ingredients.
  3. To dry mixture add eggs, carrots, vaniklla, pineapple and oil. Stir to combine.
  4. With mixer on low speed, beat batter until all ingredients are mixed and moisted.
  5. Turn speed to medium and beat at medium speed for another 2 minutes.
  6. Fill muffin cups with batter.
  7. Bake for 25 minutes or until browned.
  8. NOTE: This recipe produces better results if mixed with an electric beater; hand stirring may yield unsatisfactory muffins.
