Tuna Jambalaya

- 1med. to lg. onion, chopped shopping list
- 1 green bell pepper, chopped shopping list
- 1 rib celery, chopped shopping list
- 1 to 2 garlic cloves, minced shopping list
- 1 stick butter shopping list
- 1 can ( 16 oz.) tomatoes shopping list
- 1 can (14 oz.) beef broth shopping list
- 1/2 can water shopping list
- 1 Cup raw rice shopping list
- 1 to 2 cans (6 1/2 oz. each) tuna, drained shopping list
- 1/2 tsp. pepper shopping list
- 1/4 tsp. salt shopping list
- 1 Cup frozen okra (optional) shopping list
How to make it
- Saute onion, bell pepper, celery, and garlic in butter.
- Combine tomatoes, okra (if using), broth, and water.
- Add to vegetables in step 1 and bring to a boil.
- Add rice, tuna, salt and pepper to boiling liquid.
- Cover and simmer until rice is cooked (about 15-20 minutes).
