Tuna Jambalaya Recipe
This is a kind of twist on regular jambalaya. It's really delicious and easy to prepare.

Ingredients
  • 1med. to lg. onion, chopped
  • 1 green bell pepper, chopped
  • 1 rib celery, chopped
  • 1 to 2 garlic cloves, minced
  • 1 stick butter
  • 1 can ( 16 oz.) tomatoes
  • 1 can (14 oz.) beef broth
  • 1/2 can water
  • 1 Cup raw rice
  • 1 to 2 cans (6 1/2 oz. each) tuna, drained
  • 1/2 tsp. pepper
  • 1/4 tsp. salt
  • 1 Cup frozen okra (optional)

Directions
  1. Saute onion, bell pepper, celery, and garlic in butter.
  2. Combine tomatoes, okra (if using), broth, and water.
  3. Add to vegetables in step 1 and bring to a boil.
  4. Add rice, tuna, salt and pepper to boiling liquid.
  5. Cover and simmer until rice is cooked (about 15-20 minutes).
