Southern Hotcakes With Buttermilk Recipe
My Granny always made hotcakes, which are usually just flour and milk. When I was poor, I made them with flour and water! But my husband never liked them, so I made up a new version for him.

Ingredients
  • Olive oil
  • 2 cups self-rising flour
  • Pinch baking soda
  • 3/4 cup buttermilk
  • 1-1/2 cup sweet milk

Directions
  1. Begin heating olive oil in pancake skillet over medium heat.
  2. Combine flour and soda - no need to sift, unless you use a heavy flour.
  3. Add wet ingredients and stir well.
  4. Use a 1/4-cup measuring cup to pour batter onto skillet.
  5. Cook hotcakes over medium heat or lower (because of buttermilk), browning both sides and cooking through.
  6. Serve with syrup and/or enough butter to choke a goat.
  7. Or may use as accompaniment to regular breakfast instead of toast.
