Ten Minute Paella Recipe
This is a quick, basic paella recipe. I add canned to frozen artichoke hearts, vary the meat and seafood, just depends on what is on hand.

Ingredients
  • 1 (8 ounce) package yellow rice mix
  • 16 ounces clam juice
  • 12 to 16 ounces cooked shrimp, peeled
  • 1 pound boneless chicken thighs, cooked and cut in large pieces
  • 1 cup frozen peas, thawed
  • 1/2 cup kielbasa or cooked Italian sausae, cut in thin slices
  • 1 (7 ounce) jar roasted red peppers, coarsely chopped
  • 1 can baby clams, drained

Directions
  1. Prepare rice mix according to package directions except use clam juice in place of water.
  2. When rice is cooked, fold in remaining ingredients.
  3. Cook 5 to 10 minutes or until heated through.
