How to make it

  • Place Water and beans in a medium saucepan and bring to a boil.
  • Cover, reduce heat to a simmer, and cook 20 minutes (stirring frequently) or until the beans reach a creamy consistency and all of the water has been absorbed
  • While the lentils are cooking, melt the margarine in a skillet and lightly saute the Almonds and Cashew pieces being careful not to burn them
  • Set aside the skillet when done
  • When the beans have reached that creamy texture, stir in Brown Sugar and bring to a boil. The sugar will make the mix a bit watery until it reaches that second boil.
  • Then Stir in the coconut milk.
  • Stir in the Cardamom and empty the melted margarine and sauteed nuts into the saucepan with the beans.
  • Simmer another two or three minutes to infuse the flavors.
  • May be served warm or chilled.
  • WARNING: IF YOU START EATING IT WARM THERE WILL BE NONE LEFT TO SERVE CHILLED !!

    Actually, the beans and lentils take on the flavors of the coconut milk and spices, and the brown sugar makes it just sweet enough without being too sweet. I tend to prefer the savory side of things, so when I make something sweet, it's not as sweet as many people like it.
