Moong Dal Kheer or Payasam AKA Lentil Pudding

- 1 Cup Moong Dal (mung beans) - Bob's Red Mill carries it shopping list
- 1/4 Cup Chana Dal (lentils) - Bob's reg Mill has this too shopping list
- 2 Cups water shopping list
- 1 1/2 Cup Packed brown sugar shopping list
- 1 Cup Ccoconut milk shopping list
- 2 Tbs. slivered almonds shopping list
- 3 Tbs. Broken cashews (unsalted) shopping list
- 2 Tbs. margarine or (Heaven Forbid) butter shopping list
- 1/2 tsp. cardamom (cinnamon or nutmeg may be substituted) shopping list
How to make it
- Place Water and beans in a medium saucepan and bring to a boil.
- Cover, reduce heat to a simmer, and cook 20 minutes (stirring frequently) or until the beans reach a creamy consistency and all of the water has been absorbed
- While the lentils are cooking, melt the margarine in a skillet and lightly saute the Almonds and Cashew pieces being careful not to burn them
- Set aside the skillet when done
- When the beans have reached that creamy texture, stir in Brown Sugar and bring to a boil. The sugar will make the mix a bit watery until it reaches that second boil.
- Then Stir in the coconut milk.
- Stir in the Cardamom and empty the melted margarine and sauteed nuts into the saucepan with the beans.
- Simmer another two or three minutes to infuse the flavors.
- May be served warm or chilled.
- WARNING: IF YOU START EATING IT WARM THERE WILL BE NONE LEFT TO SERVE CHILLED !!

I have no idea what Mung Beans or Lentils would taste like in a sweet recipe - but it sounds too great to pass up! Thanks for the great post!
