Ingredients
  • 1 Cup Moong Dal (Mung Beans) - Bob's Red Mill carries it
  • 1/4 Cup Chana Dal (lentils) - Bob's reg Mill has this too
  • 2 Cups Water
  • 1 1/2 Cup Packed Brown Sugar
  • 1 Cup Ccoconut Milk
  • 2 Tbs. Slivered Almonds
  • 3 Tbs. Broken Cashews (unsalted)
  • 2 Tbs. Margarine or (Heaven Forbid) Butter
  • 1/2 tsp. Cardamom (Cinnamon or Nutmeg may be substituted)

Directions
  1. Place Water and beans in a medium saucepan and bring to a boil.
  2. Cover, reduce heat to a simmer, and cook 20 minutes (stirring frequently) or until the beans reach a creamy consistency and all of the water has been absorbed
  3. While the lentils are cooking, melt the margarine in a skillet and lightly saute the Almonds and Cashew pieces being careful not to burn them
  4. Set aside the skillet when done
  5. When the beans have reached that creamy texture, stir in Brown Sugar and bring to a boil. The sugar will make the mix a bit watery until it reaches that second boil.
  6. Then Stir in the coconut milk.
  7. Stir in the Cardamom and empty the melted margarine and sauteed nuts into the saucepan with the beans.
  8. Simmer another two or three minutes to infuse the flavors.
  9. May be served warm or chilled.
  10. WARNING: IF YOU START EATING IT WARM THERE WILL BE NONE LEFT TO SERVE CHILLED !!

What a great recipe and it has everything I can eat and love... thank you and 5 forks

I have no idea what Mung Beans or Lentils would taste like in a sweet recipe - but it sounds too great to pass up! Thanks for the great post!

Actually, the beans and lentils take on the flavors of the coconut milk and spices, and the brown sugar makes it just sweet enough without being too sweet. I tend to prefer the savory side of things, so when I make something sweet, it's not as sweet as many people like it.
