Beef Tenderloin Steaks With Blue Cheese Topping Recipe
BEEF TENDERLOIN STEAKS WITH BLUE CHEESE TOPPING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Gonzalez Estate in Mesquite, Texas in 1987.

Ingredients
  • 4 beef tenderloin steaks cut 1” thick
  • 1 large clove garlic cut in half
  • 1/2 teaspoon salt
  • 2 teaspoons chopped fresh parsley
  • Topping:
  • 2 tablespoons cream cheese softened
  • 4 teaspoons crumbled blue cheese
  • 4 teaspoons plain yogurt
  • 2 teaspoons minced onion
  • 1/8 teaspoon ground white pepper

Directions
  1. Combine topping ingredients in small bowl.
  2. Rub both sides of beef steaks with cut sides of garlic clove.
  3. Place steaks on rack in broiler pan so surface of beef is 3” from heat.
  4. Broil 16 minutes turning once.
  5. One to two minutes before steaks are done top evenly with topping.
  6. Season with salt and sprinkle with parsley then serve immediately.
